This is one of those meals that makes the whole kitchen smell amazing before it even comes out of the oven. The garlic butter, smoky sausage, and Cajun seasoning all start blending together while everything roasts, and every time I make it I find myself opening the oven just to sneak a look. Juicy shrimp, smoky sausage, sweet corn, and colorful peppers bake together in a rich Cajun-style garlic butter sauce creating an easy one-pan dinner that feels hearty, comforting, and packed with bold Southern-inspired flavor.
As everything cooks together, the garlic butter sauce coats every piece of shrimp, sausage, peppers, onions, and corn so the flavor gets into every bite. I love how the sausage starts caramelizing around the edges because it adds even more smoky richness to the dish, while the shrimp stay juicy and tender without becoming overcooked. The corn absorbs all of that buttery Cajun flavor and the peppers and onions soften while becoming slightly sweet as they roast.
One of my favorite ways to serve this is over a bed of fluffy jasmine rice because the buttery sauce slowly settles into the rice underneath and makes every spoonful even better. I also like adding fresh parsley and green onions at the end because they brighten everything up and balance out the rich smoky flavors without taking away from that comforting feel.
This has become one of those dinners I make when I want something that looks colorful and impressive but does not require a lot of work. It is rich, buttery, smoky, slightly spicy, and perfect for family dinners, meal prep, casual gatherings, or nights when I want something cozy that tastes like it took a lot more effort than it actually did.
